Nina Posted November 21, 2009 Share Posted November 21, 2009 If you have a way to grind it into flour, you can substitute up to half of barley flour for the regular flour in things that don't need to rise much like muffins, pancakes, cookies, etc. I've tried it successfully in whole grain muffin and pancake recipes.
