According to what I've read, you have to be very careful with contamination in cattail. And it makes sense. If you are eating the root, it is in the bottom of a marshy area. There has been runoff of all kinds into that area - synthetic fertilizers, feces, sewer runoff, junk that people pour into the ground around or directly into the water, etc. It's really sad and ironic that one plant that is entirely edible is growing in potentially the most polluted areas. Last summer, I preserved a huge amount of food that I gathered wild. This ranged from Italian Plums, blackberries, salal, Oregon Grape, currant, etc. I also was able to gather wild (but on private property) and grown but unwanted food from others and then preserve it, sharing part of the harvest with the donor. Worked great for both of us!
