moldy Posted July 25, 2008 Share Posted July 25, 2008 Peach Pie Filling 6 qts. sliced fresh peaches 7 cups sugar 2 cups plus 3 tblsp Clear-Jel (no substitutes). Clear jel is a modified corn starch that hold up well to the heat during a water bath 5 ¼ cups water 1 tsp cinnamon 1 tsp almond extract 1 ¾ cup lemon juice Peel peaches and slice into a bowl containing 1 gallon water and ½ tsp ascorbic acid (or 6 500 mg vitamin c tablets). This will prevent browning. Combine water (the 5 ¼ cups), sugar, clear jel, cinnamon, and extractin a large kettle. Stir and cook over med-high heat until mixture thickens and begins to bubble. Add lemon juice and boil 1 minute more. Stir in peach slices and heat for 3 minutes. Fill jars, leaving 1 inch head space. Seal and process 20 minutes in water bath. Makes 7 quarts. Link to comment
