  1. I'm also worried about too much fat. I had a freezer meltdown last week and canned a bunch of chicken and broth. I normally would let the broth chill overnight and lift off the fat befor re-heating and canning, but this time I did not have room in the fridge, and no time to make it a two day process. So my chicken meat and broth has a little less than half an inch of fat floating at the top of each quart.
  2. Mto3, My Presto has a dial guage, but I bought a special weight so I did not have to rely on the dial. With a dial guage, you are supposed to get them tested every year to make sure they are accurate, and I did not want to have to fool with that. Not to mention, if there won't be a way to get it checked. To me, the wieghted gauge is so much easier. I can listen to the rocking while I am doing other things in the kitchen, not standing there watching the darn dial all the time.
  3. Oh my! Don't spend that much plus shipping ona Ball Blue Book! They have them at WalMart for under $6.00! Or, if you have a Borders or other chain bookstore, if they don't have one in stock, they may order it in for free. Would be worth a phone call.
  4. "All I've ever has is older vehicles..." Made me think that you might be a survivalist if you refuse to trade in your old clunker for a new car becasue you think it might still run after an EMP!

  6. I bought a Presto canner specifically because it is lighter and suitable for glass cook tops. I've canned meats with no problem.
  7. Wow! How resourceful for a young bride to find so many uses for Bisquick! DH is the youngest of 8. His mom would serve any kind of stew, even beef stew with taters in it, over rice. Rice and pasta are great money stretchers. I still get giddy when I make tuna casserole using TWO cans of tuna - woo hoo! I used to make one can feed four! LOL!
  8. Quilty, it IS good stuff! I'm as bad as the guys in eating it up. I just tok another double batch out of the dehydrater. I doubt it will last the week.
  9. I am such a lucky girl! Not only did I get a pressure canner, DH also got me a new dehydrator! Did I mention that I'm married to the most wonderful man in the world? I have made several batches of beef jerky with extra lean ground beef and the Nesco jerky seasining packets. It gets eaten up almost as fast as I can make it! I also made dried bananas with no pre-treatment. They werent as pretty as store bought, but that didn't stop us from eating them up. I think I'll make some more this weekend with a lemon juice dip first, just to compare.
