  4. Depends on who on You Tube your watching as to whether I would trust it or not. I have a few ladies on there that I like and trust their methods. Never heard of recanning OJ myself though. You can safely can oranges, grapefruit and other citrus fruit. And you can also can other fruit juices. Might want to do a little research or contact Ball and ask about it.
  5. Jeepers - Was that the Australian lady She's a Bottler's video? I saw that recently and wondered about it too. Basically she is just pickling the veggies so it should be okay I guess. Like the piccalilli relish on the Ball web site -https://www.freshpreserving.com/piccalilli-relish-|-piccalilli-relish-recipe---ball-fresh-preserving-br1134.html I personally think it would be a bit soggy and too vinegary for my taste. I like my cole slaw crunchy and more sweet than vinegary.
  6. Hi Ambergris! Is no one canning this summer? Okay since my last check in I've canned pickle relish without any onions and peppers, sweet pickles, bread and butter pickles, 15 lbs of ground beef, lemon honey jelly and zucchini bread jam. Also got another 25 lbs of ground beef put up in the freezer.

  8. Been a bit since I've dropped by. Since my last post in this thread I've canned pickled onions, sweet relish, balsamic onion jam and chicken stew. Planning on trying to get some pickle relish done this weekend.
  9. Last weekend, I canned some chocolate strawberry sauce. Got 8 half pints. Had a little left over so I had it on some ice cream.
  10. Ever since I started canning, we can't find a commercial brand spaghetti sauce that we like anymore. We're out so I need to make more this summer. Thankfully still have some canned tomatoes so I can make a sauce and add what I want as far as seasonings.

Hi Ladies, I need your expert opinions on the recipe for strawberry syrup at this site - http://jamiecooksitup.net/2016/06/how-to-make-canned-strawberry-syrup/ Does this look to be a safe recipe to can? I'm thinking it is since its got the fruit, sugar & lemon juice, but wanted to double check because it is different from the recipe in the Ball Blue book and their web site. Ball calls for corn syrup to be added. I really don't want to put corn syrup in mine. Ball also doesn't have the tablespoon of butter, but I figure that for the foam. Would ya'll use this recipe?
  14. I caught asparagus on sale for .98/lb and managed to get get 10 lbs canned. Made 7 pint & half jars. Had a little left over for dinner.
  15. I'll be picking up my first Zaycon order Monday evening. Got the 40 lb box of chicken breasts for just under $60. Worked out to about 1.48/lb.
