  1. I've got 7 pints of chicken meat in broth in the canner right now and come morning I'm canning up 7 pounds of asparagus I've been blessed with.
  2. Canned 12 pints of homemade chili con carne, 12 pints of spiced cucumber chunks, and have an old rooster simmering in crock pot to make into chicken soup this evening to can up tomorrow.
  3. Yesterday I canned 11 quarts of spaghetti sauce with buffalo meat, 4 quarts dill pickle spears, 2 quarts dill pickle chunks, and 3 pints hamburger chip dill pickles,& 1 pint baby Kosher dills. Also 9 quarts of Bread & Butter pickles, 1 pint green beans and 1 pint green beans with corn. Today I am canning chicken meat and a rich, seasoned Chicken broth for the food pantry. Am in the process of inventoring the pantry to see what I need to buy at the store.

This was my Grandma's recipe and everyone who has tried it absolutely love it! 1 lb ground beef 1/4 cup catsup 1 small onion chopped 6-8 crackers crushed 1 egg salt pepper pinch of oregano 1/4 tsp garlic powder Mix all ingredients together. Then form a meatloaf into a pie plate leaving 1 inch space between meatloaf and sides of pan. Fill this space with 3/4 inch water and bake in oven at 375 degrees for 40-45 minutes. (The water helps steam the meatloaf and provide moisture that will make the meatloaf juicy, not dry). I hope you enjoy!

  12. Boy am I glad that I read this post! I was cleaning through things and getting ready for a yard sale. I pulled out tons of candles that we weren't going to use...the taper kind! I prefer using the kinds with jars that are safer to burn, etc....DUH I can melt these taper kind into jars and make candles! What was I thinking...I almost threw out a great treasure!

  14. I cannot believe that I still have broccoli, spinich and Romaine Lettuce growing. We are having a little warmer winter...we only had a couple nights that were freezing, but it didn't kill my plants. Wow!!!! It's great having these yummy veggies with our meals. What a wonderful blessing!
  15. I try and buy organic if it isn't too expensive for the produce. If it is too expensive, I use a fruit/veggie wash to help get the wax, pesticides off. We also purchase Range Free, grass-fed beef from Texas. It's more expensive but we are doing it for health reasons and don't feel we have much a choice. It tastes good and is lean. I love Free-range chicken too! They are bigger and better tasting....just so expensive. Hopefully we will start seeing a change in the trends in the U.S. so that it is readily available and not quite so expensive.
  16. New Years goals: 1. Get out of debt (except house payment). I am going back to work full-time in January to help us do this by mid-year and then we will try and get a little bit of savings set aside. 2. Be healthy...by eating healthy and exercising and getting enough sleep. Then hopefully I will lose weight too! 3. Be more organized. I have already started re-organizing things around the house before I go back to work full-time. 4. Spend daily time reading my Bible and praying. That's it! I don't want to have so many goals that I can't even possibly keep them.
  17. This was the first Christmas we celebrated since my mom went to be with the Lord. I wasn't sure what to expect, but it was a good day. I had put together a bunch of writings my mom had done into folders for the entire family. I also had a couple ornaments engraved with her name and 1939-2002 to give to my dad and brother. It felt good to somehow remember my mom in a positive way through these things. We visited a little with extended family, but then my dad, brother, my husband and I came to my house for a spaghetti dinner (it was so simple) and Monopoly. We laughed, we remembered things about Christmas with my mom and we all enjoyed the time to be together. I am so grateful that it was a positive day for us!
  18. Family just left town yesterday, and this was my first chance to get online for a while. I am so saddened and shocked! My prayers are with Peg and the family as they are experiencing deep pain right now. I am praying that the truth will be revealed to the investigators and that Peg will be released and her name cleared!
  19. I am still here! I have been working a part-time job that has taken more hours than I had planned. But, it doesn't matter now, because I am going to go back to work full-time in January. Then....making Christmas gifts, planning Christmas parties, etc. Whew....I am tired! So, I will just have to pop in now and again and say Hi! I hope everyone has a Merry Christmas!

    The holidays!

    Boy, it sure is hard to eat right around the holidays. I have been so busy, I sometimes grab the easiest thing.....fast food, etc. I am starting to gain weight again! I also haven't been exercising. I have been working approximately 10+ hours a day auditing files for my "part-time" job. Other than my fingers and brain exercising, not much else is. Oh, I need to get a move on...I don't want to lose the ground I made earlier this year. Anyone else struggling right now?

  22. I have met Dale Evans Rogers, Tom Netherton (he used to sing on Lawrence Welk Show), Mary Tyler Moore, "Tommy" from Eight is Enough show....I think that is all!
