  2. My mother would often make depression foods for us. They were her "comfort" foods. I still do a couple of hers today. Fried cabbage Coarse chop a head of cabbage Fry in skillet with a tablespoon bacon grease Make a simple yeast bread I sue my favorate white bread recipe: 3 cups flour 1 t salt 1 T sugar 1 package yeast 1 cup warm water 1/2 cup dry milk powder 1 T butter Mix and let rise Do not use a pan, use almost like pizza crust. Make into individual crusts (About three or four each) Bake in hot oven. Will puff up and then fall slightly. Cut in half. It is like pita bread. Spoon cabbage in pocket. It is simple and good. Depression Stew Small amount of ground beef 3 cups water onion 1 beef bullion cube 3 large potatoes cubed 1/2 cup macaroni Brown beef and onion in skillet Add to p9ot of water and add bullion cube When boiling add potatoes Boil for 12 minutes and then add macaroni. Boil until macaroni is al dente. I can make only one bowl of this and it is very filling. You don't need a lot of meat just a taste.
  3. Fifteen years ago DH and I had over 150 rabbits to raise commercially. Boy talk about work. Up early before work and feed, water, take care of babies, feed wter take care of babies. Clean under hutches. Trying to convince the grandkids that everytime I fixed something that looked like chicken it wasn't rabbit. We have no animals right now except our "baby" rot. Do miss chickens but not rabbits. Many a cold morning had baby rabbits in my bra to keep them warm. That is a different story saved for later.
  4. Potato Lasagna 1 lb ground beef browned with onion and garlic to taste. I use about 1/2 cup onion and 1-2 cloves garlic (depends on the vampires around here. Ha Ha) 16 oz tomatoes sauce, whole tomatoes I have even used salsa on occassion. Mix with ground beef as if a good spaghetti sauce (you can use more if you like your lasagna saucy. 1 container cottage cheese or ricotta Mix with 1 egg and parmeasan to taste. About 1/2 cup or to taste. Mushrooms, zuchinni, or any type of veggie you can get your family to eat. I often use spinach. I also mix veggies. Trying to get that 5 servings into my family. Potatoes - In my 11x13 pan I use four to five sliced thinly. I often precook the potatoes in boiling water to soften and shorten cooking time. If you do that you boil for about 10 minutes to "half cook" them. You don't want them falling apart. Layer potatoes, cottage cheese/ricotta mixture. Put potatoes on top. Add sauce with meat. Add shredded cheese mixture (Mozarella, chedder or a mixture of both) continue layering until all ingredients gone. Top with cheese. Bake at 350 for about 35-40 minutes or until cheese is brown and mixture is bubbly. Serves 4 or so. Serve with hot french bread and a nice green salad. Enjoy.
  5. My acorn squash recipe is similar Acorn squash cut in half and seeded. Sausage and apple mixed together. Add a touch of cinnamon and bake at 350 about 45 minutes or until tender. Stuffed squash 1 butternut squash or acorn cut in half and seeded Stuff with chopped apples, a touch of brown sugar and sprinkled with cinnamon. Dot with butter and bake at 350 degrees until tender. Butternut soup Cook until tender one butternut squash. Scrape all meat into blender. Puree In soup pot add 2 cans of chicken broth. Add squash. Simmer until hot. Add 1 qt of fat free half and half. Heat until hot. Add 1/2 tsp curry powder (I add a touch of chili powder and a dash of cinnamon) Serve hot with hot french bread.
  6. Potato Lasagna Made like regular lazana but use thinly sliced potato in the layers. Bake at 350 one half hour before adding the top layer of cheese. Bake a final 30 minutes until cheese is golden. Great for folks that are alergic to wheat. I will post the full recipe if anyone is interested.
