DD#2 just lost everything in a fire and I'm making her a homemade recipe book of easy, economical recipes that she can make for herself and little Cody. Any recipes would be greatly appreciated! T. Guest Guest Posted October 31, 2002 Share Posted October 31, 2002 One of the easiest standbys that I use is as follows: 1# Ground Beef-browned 1 onion- browned 1 can kidney beans-add to the browned onions and meat. You can season with just salt and pepper or soy sauce or hot sauce. You can put it in a bun or on toast. You can add tomatoes. My vegetarian daughter makes just the onions and beans. She browns the onions in a touch of water to get them going. This is just a good, flexable recipe. I'm sorry your daughter has had a fire. It must have been horrible. My kids loved ground beef stew 1 lb ground beef (browned) 1 onion chopped 1 can each of cream of mushroom and(celery or cheese soup) a little cayenne pepper 1 can of green beans noodles Might have to add water or precook the noodles. I was thinking Stuffed Peppers 6 Bell Peppers ground beef 1-2 pounds rice (approx 1 cup) can be instant 1-2 eggs (slightly beaten) salt/pepper grated onion In large pan par boil peppers till colors change and they are slightly soft.....if your using instant rice...measure out 1 cup...put in bowl.....add 1 cup of boiling "Pepper water"....let sit. Drain peppers and put into baking dish. MIx other ingredients together...add rice.... i usually add some sauce for moisture. Fill peppers with mixture....cover with sauce ....bake 350 for approx 1 hour You can add or subtract any ingredient to your liking.....use home made tomato sauce or bottled (i like Ragu chunky mushroom) ------------------ Quote Link to comment

I dont know what she needs at this point Di... she and cody are staying with her soon to be ex- inlaws so it keeps Michael in her life and she isn't happy about that, but she has no place else to go.
