Shaker Dried Applesauce

I had heard of dried applesauce in the Little House on the Prairie book series by Laura Ingalls Wilder, but I had never seen a recipe for it. I just checked out a Shaker cookbook from the library and found this recipe. It looks like a good one for the crockpot:

 

Shaker Dried Applesauce

 

Wash and soak overnight one pound of dried apples. Add 1/2 pound of sugar and boil 12 hours adding water as needed.

and how is it dried?

OK westbrook, I'm with you. Thinking she did not tell us how to dry it. I would have to want applesauce bad to cook it 12 hours.

yeah! LOL! I am thinking.. dried apple sauce.. ok, fruit leather? cool...

 

so I start with apple cause and ................

 

ok, I cook it to thicken it and then to dry it.............

 

 

now I feel a bit foolish! but now I know how to reverse the process from dried apples to applesauce which can be used to replace oil in baking!

 

this is actually exciting.. but still drying applesauce sounded kind of cool.

When I make fruit leather I use have applesauce and half pureed fruit or berries. I sweeten to taste. Dry on the fruit leather sheets in the dehydrator. I like the texture of these best and makes my other fruit go farther, too. Sometimes I stir in a little jello powder if I want more flavor. That or even a dab of jam.

I have dried applesauce from Walton's and am a little frustrated with it because it has parts of the inner core in it and when you eat it, you're constantly coming across it.

 

Maybe it's just me, but I notice it.
