mommato3boys Posted July 2, 2008 Share Posted July 2, 2008 Some how or another I ended up with a Kraft foods magazine that has recipes in it. One of their recipes was for a Chicken Fiesta Salad... This is it the best I can remember...(I am at work and it is at home) 8 cups of torn lettuce 1 cups chopped cook chicken 1 15 oz can black beans rinsed 1 10 pack frozen corn thawed Taco sauce don't remember the amount Kraft 3 cheese crumbles Ranch dressing tortilla chipss Well I made a few slight changes 8 Cups of lettuce 2 boneless skinless chicken breast seasoned with Adobe seasoning and grilled Dry black beans cooked in the crock pot- used one (1) big slotted spoon full per plate. Didn't have frozen yellow corn so I went with canned white corn drained. (again 1 slotted spoon full per plate) No taco sauce so used fresh homemade salsa Ranch dressing Didn't have 3 cheese crumbles so I used Colby/Jack cheese Added 1 dices fresh tomato Added 1 sliced onion Added 1 sliced avacado Used the last of the tortilla chips (they were broken in to a zillion little pieces they acted sort of as crutons. This one looked good so why not? Oh My Goodness! it is a to die for salad! Garden Party Pasta Salad Ingredients: 8 oz. of your favorite pasta 4 large ripe tomatoes, diced 4 ounces mozzarella cheese, diced 4 tablespoons olive oil ½ cup fresh chopped basil pine nuts (optional) salt and pepper to taste Water for boiling pasta Boil the pasta until al dente. In a large bowl, combine the tomatoes, basil, mozzarella cheese, and olive oil. Drain the pasta and add to the tomato mixture. Toss gently, and garnish with fresh basil leaves and pine nuts. INGREDIENTS 3 tomatoes, chopped 1/2 cup finely diced onion 5 serrano chiles, finely chopped 1/2 cup chopped fresh cilantro 1 teaspoon salt 2 teaspoons lime juice DIRECTIONS In a medium bowl, stir together tomatoes, onion, chili peppers, cilantro, salt, and lime juice. Chill for one hour in the refrigerator before serving. Link to comment
