Kitchen Tips & Tricks for Easy Canning

I was watching a video earlier, and to my surprise I saw the cook doing something that I had never seen anybody do before, and now I am wondering why I never knew this! 

 

Have any of you ever seen or used this trick before to keep your strainer in place while processing ANY recipe???  

 

Notice what she did with the wooden spoon.

Here's another tip I never knew about! 

Did you know that the notches on the spatula that you use to remove air bubbles from your canning jars are for measuring head space???

These are old tricks.  I have the air bubble thing like that. Though I don't use it for that as I have been canning so long now that I can judge the headspace by looking at it. As for the wooden spoon and strainer. I have done that as well but not using a wooden spoon but a stainless steel spoon. It works great. 

Both are great ideas. And they do work great as well.

I didn't know about the first one but I did the second one.

 

I don't use the notches anymore because everything I can used a half inch head space and that is the big line on the lower neck of the jar.
