Not to mention a way to learn homesteading skills and earn the money you need for your dream place of your own. I found places like this in most of the states. Gardens of Eagan 25498 Highview Farmington, MN 55024 Contacts: Atina and Martin Diffley (612) 469-1855 Gardens of Eagan has internships available on 100-acre organic vegetable farm located in Eureka, MN (45 min. south of Twin Cities). Certified since 1972, we grow an assortment of vegetables in row crop style, with a small amount of acreage in a bed system. Interns work directly with the farmers in the field, greenhouse, and pack shed, doing each step of the farm tasks—including equipment use, maintenance, site selection, fertility methods, planting techniques, weed control, harvest skills, greenhouse operation, soil preparation and care, green manure/cover crops, variety selection, pest management, marketing skills/strategies. We market to 8 stores, 2 wholesalers, 1 restaurant, and run our own roadside stand. All produce is sold locally and marketed as certified organic. We accept 4 interns each year. Most start around April 20 and stay until Oct. 31 (other options are available). Work is generally Mon. through Fri., with weekends off. Informational luncheon is held once a week on a topic. Interns receive training, experience, produce, board, and a monthly stipend starting at $800. The work is often hard; farming is not for everyone. He probably won't want to go somewhere for a few months, but might be interested in visiting and at least seeing what it's like. We've been talking about how we might buy a townhome to begin with to save money on rent and then save money for a place of our own with more land. Our lease here is up in May, but my DH is not interested in buying anything until he has a steady job...guess I can't blame him. Sometime in the Spring, though, it'd be fun to go out on a day trip and check some places out.
