I cooked these regularly for my family. This is the recipe printed on the box of El Molina bran flakes which I cut out.
BRAN MUFFINS
1 cup El Molina Whole Wheat Pastry Flour
3 teaspoons baking powder
1/2 teaspoon salt
1 cup El Molina Bran Flakes
1 egg
3 tablespoons molasses
3 tablespoons oil
1 cup milk
Heat oven to 425 degrees. Sift flour, baking powder and salt together. Add Bran Flakes. Beat egg, add molasses, oil and milk.Add dry ingredients and mix only enough to moisten flour. Fill oiled muffin pans 2/3 full.
Bake for 15 minutes or until done. Makes 8 medium muffins. For variation, 1 cup of rains or chopped dates may be added.
