Cheese storage

Hello all,

I'm new-ish with a question about storing cheese for the long term.

 

I know that waxed cheese can stay on the pantry shelf for a pretty long time. Could the same results come from just using a "food saver"? Is the only purpose of the wax to keep the air away, or does it do something else? And for that matter, could I do the same thing with pepperoni? I'd like to buy the giant bag from Sams and vacuum pack it into smaller portions and keep it in the pantry.

 

Any advise would be greatly appreciated. I used to come here alot back before Y2K, and with this flu coming, I found my way back.

the sausage is dry smoked and is fine.. but at some point must be used.. the same with waxed cheese.

 

Cheese Whiz in jar? make your own from powdered milk? learn to make cheese? how long does velveta last?

 

wonder if ya can make soya cheese at home?
