Drying field wheat

I've got a great chance at getting hold of some wheat directly from the field in my area. Yep, wheat grows in S. Louisiana. Anyhow, God's hand (I mean that literally) led me into a conversation with a woman whose husband is going to be harvesting some wheat next month and is willing to let me glean what's spilled in the field. Sometimes several hundred pounds depending on how sloppy the loader is.

 

Sooo...since I've never fooled with wheat from the field, I'm wondering how a simple guy like me can dry the wheat enough to bag it in Mylar and expect it to keep safely? How is moisture content measured in wheat so they know it's 'dry enough'? I live in a humid environment (already 68% today) which will work against evaporative drying but there's usually a breeze which will help if I just lay it out and let the sun do it's job.

 

How's it done in the wheat belt? Rice I can talk about but I don't know squat about wheat from the field. Hep me please.
