I'd like to do some more canning...but what kind of stuff can I can? If I make a soup from scratch, have it ready to serve (so that I don't have to add water later) can I just can it? It's just that I have some food put away, (about a week's worth...I realize that it's not much, but it's all we have space for...) but I'd much rather put away homecooked food, than stuff from cans...any ideas?

I make my chili and vegtable soup and can it. You pressure can it at the pressure and amount of time it calls for on the type of meat you use in the soup. If you don't have a canning book with the time and pressure in it let me know. Its sooo nice to just open the can and heat up the soup. I can chicken breast and roast cut in chunks and boy is it tender!

As a rule, potatoes, rice and pastas don't can well. That doesn't mean they can't be used at all, but most people I know add them as they're reheating the soup.

 

The best thing to do is to get the latest "Ball Blue Book" canning book, or go to the links that are up-to-date and trustworthy. Ask about the book where you buy canning supplies.

 

You can get ideas from other books or sites, but always use the canning times in the latest information for recipes.

 

Your local library will have plenty of recipes.

You should have a pressure canner if you will be canning much. It's the most versatile. The one with the gauge needs to be professionally tested (extension offices do this) occasionally to see if it's still right, while the ones using a weight don't.

Wow! I might have to wait to do this canning until I can afford to buy all the gadgets...I'll look at Target and CubFoods and see what they have for prices though...thanks for the info!!!

Oooooohhhhh...I just remembered...My inlaws gave me $20 for my birthday, and I've been saving it for a rainy day...maybe it can go towards that!
