finski Posted January 10, 2011 Share Posted January 10, 2011 Tomorrow is going to be a good day for me to make this..... Red catfish stew 2 cans tomato sauce 1 can stewed tomatoes 1 can creamed corn 1 onion - diced 2 garlic cloves - diced 3 slices of bacon - chopped up 1 jalapeno - seeded and diced (or 2 if you like a little more heat) 1/2 tsp oregano Worcestershire sauce - 2 dashes 2 bay leaves 1 1/2 lb catfish nuggets Cook bacon, add onion and garlic. Cook until translucent then add tomato sauce, stewed tomatoes, creamed corn and use one of the tomato sauce cans to add 2 cans of water.add oregano, bay leaves Worcestershire sauce, jalapeno and salt and pepper to taste. Can add Tabascosauce or Texas Pete if desired. Bring to a boil and then simmer for about an hour. Add catfish nuggets and bring back to a boil and cook about 20 minutes. Serve over rice. I always make a bunch and then freezse some for days like this. But I promise that when it's served up with rice I will take pics! Fixin' to put it in the crockpot in a bit and let it simmer. I got so focused on getting dinner served up, eaten and cleaned up before potentially losing power that I completly forgot to take pics. It was yummy though! AND I made homemade wheat french bread to go with. Mmmmmmmmm....... Still have pwer though, keeping my fingers crossed! Link to comment
