Jori Posted August 24, 2011 Share Posted August 24, 2011 Does this sound correct? I was given this last year from a friend who cans. I didn't have time to check it so I threw it in the freezer. It was pretty good and would like to can it, if ok. Pasta Sauce: 4 med. onions, chopped 3 small garlic cloves, minced 7 1/2 lbs tomatoes, peeled & chopped 3 T salt 4 T oregano 2 T basil 1 c fresh or 1/4 c dried parsley 3 T sugar 24 oz tomato paste pepper to taste 2 large bell peppers 3-4 stalks of celery Sweat onions & garlic. Add peppers & celery and cook til onions are transparent. Add tomatoes & cook for 45 min on low heat., stir often. Add remaining ingredients, bring to boil and reduce to simmer for 2 hours, covered, & stirring often. Cool. Run thru blender to thinner consistency. Pressure can for 20min for pints, 25 for quarts.
