Low Carb Canning recipes?

Hi,

 

We're doing the Atkins program (really love it, losing a ton) but I'm so busy with my kids that all the cooking is getting to me. I'd like to cook ahead, but don't want to have too many freezer meals, as we may be moving again in the near future.

 

Does anyone know of any low carb canning recipes? Since we're still in the induction phase, we can't have any sugar, honey, molasses, potatoes, rice, pasta, tomatoes, flour, corn, beets, carrots etc. We avoid aspartame, but can have sucralose (Splenda). We can't have milk, but we can have some cream. Onions in moderation.

 

I've searched the web, but came up with nothing. Any recipes? Thanks!

Good for you Philomena! My DH and myself have lost a lot of weight on Atkins as well. I would go to the Blue Ball sight - or pick up their latest book. We are past induction and in the middle of canning - so we are canning everything in very light syrup - know you can can without sugar, but that didn't sound too good. Will keep my eyes open for you as we take the Low Carb Energy magazine too. Keep up the good work!

It is possible to can fruits without sugar, but the fruits are darker and unappetizing.

 

My cousin tried it when her DH was pinching every penny, and then after all that work, he didn't like it. You can't re-introduce the sugar later and have it taste right.

 

I'd have to think about it for a bit... :(
