  1. Uhmmm no not happening. This is why I have packages delivered to work. Or track them online and since I am good friends with the UPS driver here make arrangements to meet him at my house. No one and I do mean no one unless I pushed out out of my whowho gets a key to my house.

  2. OMG let me tell you how I spiced up canned pintos.

At the church where I work they have Wed nite dinner. Well the cook called in sick and it was Wednesday. So the pastor and I came up with Mexican Stack. Which is basically taco salad. So I ran to the store and bought everything needed. I got the bright idea to make charro beans and cilantro lime rice but couldn't find everything needed for the beans. So I though well what I have will have to do.

    Here is what I used...

    1 #10 can pintos

3 cans of fire roasted tomatoes

    1 onion diced

    1 bunch of cilantro

diced ham (bought a small pack of sliced ham and diced it)

5 fresh jalapenos (deseeded and diced_

    lime juice from one lime.

    2 tablespoons minced garlic

    1 tablespoons chili powder

    1 tablespoon cumin

Put in the crock pot on high for 3 hours. They loved it. Had lots of calls for the recipe today. I am thinking this would be great using dry beans and a ham bone. Cooking on low all day. Serve with cornbread and you have a meal

Is there just one oil field shut down or is this a trend.  If so.....why?

In areas of less population density...small towns/agri rural.....if the main job provider shuts down, it's very hard for the area to survive, unfortunately.  :(

MtRider  ..... God has your back..

MtRider, it is just our area. Here people got greedy when oil was $150 a barrel and they over pumped. They basically flooded the market. We are small town /agri rural and yes the main job provider cut back big time which caused two plants here to do major cut backs and a lot of the little roustabout companies went where there was work or closed up shop. I still have my job at the church but well no benefits and the pay is good for a church but not enough to support a family on and make house payments.

  4. When we lived in NC we had three college age boys at home. Man I thought it was tough feeding them when they were kids and played sports. I learned to cook just about everything from scratch. I remember one time Kroger had an AWESOME sale and I stocked up. My shopping cart was overflowing. I had like 5 5# bags of unbleached flower, cornmeal, all your basic supplies and this lady looked at my shopping cart and said "Do you know what to do with all of that?" I was floored. This lady was older than me (I was mid 40's at the time) I said yes I cook everything from scratch. She was shocked. She said I need to come to your house and learn to cook. I asked if she knew how to make pie crust and homemade bread. She said no she never learned. I just looked at her and smile and pushed my cart on down the isle. Even now with an empty nest we still cook 99% of the stuff from scratch. So much healthier.

  5. Nothing ... nada...nope nothing new to update.

He is still putting in applications. We are praying about moving. I really don't want to move to a large city but we are going to have to go where there is work. The oil field is shut down here which is making other jobs fold up and leave. Landscaping used to be an option but hubby has problems with his back. He has nothing between the S1, L5 & L4. So pick up heavy stuff and bending is limited.

    Please continue your prayers.

  6. I have tried container gardening here but it just is not working. We have only been in this house for about 3 years and our focus at first was getting it livable. It was a HUD foreclosure so it needed some TLC and lots of elbow grease. This summer we got the chicken coop in and now have 8 chickens. We are getting about 6 eggs a day. Hopefully the other two will start laying soon.

This fall I will start working on raised beds in the backyard. I am going for U-shaped beds. and hope to get 3 or 4 put in. I also hope to squeeze in a green house. We have such a short growing season that I really can't plant anything til late May without working about snow and freezing weather.

This spring I hope to be able to afford fruit shrubs like blueberries, blackberries and plums. I have a couple of trees that need to come down and I want to replace them with dwarf fruit trees.

I have my garden notebook printed off and put together. I did that last week. Now I just need to start planning on what I want to grow. Wish we were further south so that we had a longer growing season. It is already starting to cool off here and I am no where near ready to plant cool weather crops.

  7. Hubby has been out of work for over a year now. We were doing ok until I had to take a cut in pay three months ago. Now we REALLYYYYYYY need for him to find a job. He has applied for a couple of jobs here at the prison, not as a guard but  other positions out there. I am asking for prayer for him to get one. I would like for him to have the one in maintenance since it pays more, but we would take the mail room and not complain. Things are beyond tight right now, pennies are running when they see me come. Not only would the financial burden be relieved but it has benefits. Something my job does not have.

  8. Well last night we didn't get to can. Had to re-plumb the master bathroom sink. But tonight we have 6 quarts in the canner. I thought my waterbath canner only had 6 quarts but it holds seven so we have an empty jar in there to keep them from bouncing around. Tomorrow night we will do seven jars. Getting 4-5 diced up peaches per jar.  Probably by the time the peaches are done the pears will be ripe enough to can.

  9. Saintsfan just rolled when I read him this. He said "you women are so evil"

Don't let him fool you though. He is city bred through and through. You should see him trying to catch chickens. :laughkick:He is learning. Tonight he helped can peaches. He loves the chickens and spoils them with watermelon rinds. I have got him cooking from scratch more and more. As long as he has a simple recipe to follow he is good.

  10. The Colorado peach truck was in town this week and I made my yearly purchase of peaches and pears. Last year I froze peaches and made peach butter. This year I am canning both peaches and pears. Was hoping to do them over the weekend but they were still too green so I will be doing a box a night this week.
