  1. Wow! Ginger, Goosie, Debbie, PJ (I knew about her smile.gif ) all doing low-carb-it IS a small world, isn't it???

    Ginger-I am hypothyroid too, and taking levoxyl (I think it's the generic for synthroid). My TSH was in the low normal the last time I had a test-so I talked the doc into increasing it just a bit. I'm hoping it will help the "diet" be more effective. I am also type II diabetic, so I have too much insulin floating around in my blood, and it does NOT do a good job of getting the glucose into my red blood cells. I need to talk to him next time about getting some kind of test for checking how much INSULIN I have, not just how much GLUCOSE I have traveling around in my system-after all- it is the INSULIN which stores the excess carbs as body fat!!! Did you know that? I didn't. Whatever carbs your body doesn't use right away gets converted to BODY FAT by insulin- it's known as the fat making hormone. frown.gif

    Debbie- are you willling to do an experiment? I'll bet you that if you cut out the carbs, but keep the fat (the good kind-olive oil, butter, cream, sour cream, etc), you will NOT suffer the gall bladder attacks you experienced while eating fried foods (food deep fat fried-not fried in butter). I had acid reflux disease (constant heartburn) and I no longer take the meds for it. smile.gif It is worth a try-dontcha' think?

    Darlene-if you're giving up the cigs, and you must do something with your mouth, chew gum-SUGAR FREE gum of course!!!

    BTW-Soy IS NOT a good substitute for people with thyroid disease! I can try to find the info again if anyone is interested. It's too bad that all the low-carb stuff uses soy, or soy protein isolate-even Atkins! frown.gif But, then, he is a cardiologist, not an endocrinologist.

    And prepping for a low carb lifestyle is a definite challenge!

  2. Something ALMOST as good as ice cream is whipped cream (made with Splenda) with sliced almonds and a dash of sugar free Dasani strawberry (or chocolate) syrup!

    Something not quite as good as ice cream is cottage cheese with a splash of added cream, some mandarin orange slices, dried cranberries, and chopped pecans.

    Then there's the good old standby of BACON and eggs!

    You're absolutely correct- breakfast IS the most impt meal of the day. grin.gif

  3. Yummmmmmmmmmmmmmmmmmmmmmmmmmm on the jello and whipped cream-just don't forget to use Splenda!!! (You can use Equal or Sweet N Low, but Splenda rocks!!!)

    Make sure you READ THE BOOK even while you're "following the leader" cause the only TRUE LEADER is the good doc himself!!! (Besides-the rules are in writing there).

    Typically you are very tired for the first two or three days, but then, you wake up one morning, and you feel like an ENTIRELY DIFFERENT PERSON! It is unbelievable, and indescribable, but true!!!

    One of the biggest secrets of success in this wol (way of life) is checking the contents of what you are buying/eating for HIDDEN CARBS! Sugar is not just glucose-it is fructose, lactose, corn and corn derivitives like high fructose corn syrup, corn starch, modified corn starch, brown sugar, rice, brown rice, flour, etc.-Did you know that salt has sugar in it???? Yep-just read the label-it contains DEXTROSE!!! (supposedly to keep it "free flowing") But you can get around that by buying canning salt, or kosher salt. You even have to be careful about buying jerky! Some of it is "cured" with brown sugar, and some of the cheaper stuff is cut with wheat. frown.gif But-overall-it IS a do-able woe (way of eating).

  6. I spent the month of June in SCHOOL!!! I took Accounting in summer school-what a project! Three hours/day, 4 days/week, plus homework, a project, and an exam EVERY week. shocked.gif I spent 8-10 hours/day on the homework and the "Divesports" (business papers) project.

    Class is finally over and I DON'T have to take the final----'cause I got an "A" in the class!!!! grin.gifgrin.gifgrin.gif

    A couple of the ladies that were in the class and the teacher and I are going to Logan's Roadhouse (restraunt) on Monday to celebrate. YAYYYYYYYYYYYYYYYYYYYYY! SCHOOL'S OUT FOR THE SUMMER!!!

    (Fall classes begin on Aug 26 frown.gif - whatever happened to not starting school until AFTER Labor Day?!?!?!?!?!?!?!?)

  7. Since I don't have any noodles in my pantry to soak and beat you with, I shall just have to move in close and give you a GREAT BIG HUG!!!!!!!!

    I only wish you had given permission to the people who knew what was going on to share it with us. I am so sorry that you went through the illness and the financial woes "alone," (unlike the fire and it's aftermath). You have nothing to apologize for Dar.

  8. I'm NEVER early! And I've NEVER been the first to make the very first post ever on a new forum! I'm not sure that I can handle the awsome responsibility that that entails. wink.gif

    So, I guess I should get busy arranging things. I have pitchers of ice tea at each table around the porch with a variety of sweeteners to satisfy everybody's needs. There are lemon wedges for the tea, or you could use them in your water if you're "from California." smile.gif

    Since I have eliminated flour and sugar from my diet, I have brought cheese cubes, a veggie platter with Ranch Dip, and mixed nuts. If you want "comfort food" you'll have to wait for someone else to roll out the "tea cart" laden with sweets! grin.gif

    OK-so everything is ready. Come out, come out, wherever you are!!!
