I just heard about a grain called Treff that is quite ancient and is supposed to be gluten free. I don't know if it can be ground up but most can be so it probably can be too.
Does anyone know about how we get xanthum gum? That is in modern non gluten bread recipes as it behaves like gluten and binds the dough together with an elastic ability. It takes very little per recipe. Maybe that was used, Mt Rider?

This is a different one and could be fabricated knitting flat with straight needles and simple seamed on one side and top doing ribbing on both ends, [using] half your circumference of head measurement, fold over and seam up sides, would work I think?
One can keep it plain or use tassels or pom poms for little kids.

Evidently classic cable hats are not so much the fashion today, but this is for average womans size .

This ear flap hat is more sophisticated and requires color work knitting skills and several colors of yarn. Very nice nature scene.

This hat has ear flaps and a tie for your chin. It uses bulky yarn and size 10 needles. Depending on color and self patterning yarns it can be fun , jazzy or sophisticated, also luster in yarns make a huge difference in affect when complete. Your choice. For durability of ties I recommend learning to knit the I Cord or using a little plastic loom to make I Cords. I have sensitive ears when it comes to wind, so I like these.

This is the favorite knit hat, 3 skeins of sock yarn , size 3 dpns or circular needle and dpns ( for decreases at top)
One can use any weight yarn just figure out your gauge and multiply circumference of head x stitches per inch, minus 15% of total, and appropriate needle size for weight of yarn chosen.

The kids socks were knit with a self patterning yarn.
Brands in American craft and sewing shops and walmart may be Red Heart Heart and Sole, Patons Kroy Sock Yarns , LionBrand Sockease ( it requires a size 1 needle and more cast on stitches than the other generally available sock yarns.)
Knit Picks brands for sock yarns.
Opal brands carry sock yarns that pattern nicely
Premier Wool Free for those allergic to wool or lanolin, using size 1 needles, but it has brilliant and lovely patterning and are great for summer heat socks and anklets, easy wash and dry in machine.
These are just some that may be available. The sock yarn should be at least 75% wool, and 25% nylon ( which adds durability , especially in heel and toe areas.
You can block your socks or not when done. For gifting I would block them but I don't bother if they are just for me.

When knitting the foot of the sock, make it whatever length you need to reach the end of the small toe, before you start the toe decreases and close the toe with either kitchener, star toe or round toe directions.

The only difference is original number of cast on stitches and measurements for heel , to do adult socks but it was hard to find a top down sock knitting tutorial. I do the cuff in ribbing and then the basic leg in stockinette. We often just call these vanilla socks or basic socks.

For kitchener stitch to close a toe on socks. ( There are other methods to do toes . I actually prefer what is called the star toe or possibly the round toe and I can give instructions below for those. They look better, are smoother and actually are softer on toes that may be sensitive from arthritis or neuropathy or injury in the past. I also think they may be warmer because it creates a bit more padding/thickness at toe. )

An Alternate Long Tail Cast On method I use all the time. It is easiest on hands that may be painful or you just don't feel all that coordinated yet when handling yarn, relatively fast and easy to remember.

ok. If one studies grains well before GMO stuff, you will see how wheat was one of the first altered. I imagine you can just use whatever choice of grains that work up for yourself if you do this recipe.
I just thought it was cool . I know the Romans were huge about having their daily bread rations and this shows how a loaf was to be divided up per serving of it.
So, you can still shape it this way for some fun.

It took me all morning, yesterday to do that! I was glad to. It might help someone here get started knitting.
