  1. I did read that Annie liked to use a mixture of peppers 'cause it gave the salsa a more 'complex' taste. I opened a jar this morning for my omelet, and it was about medium hot. For some reason not as hot as when I tasted it before it went into the canner. It tasted so good, but I'm already getting a bit of a stomach ache! I guess this batch will be for ds. I do have enough tomatoes to make a milder batch for me. Guess I need to get off my hiney and get started!

     

     

  2. Thanks Violet. I thought that was right, but wanted to be sure. I'm having a terrible time with my memory, I'm continually reading in the archives to try to keep things fresh in my mind. I'm going to try some of the tomatoes in chicken spaghetti tomorrow. Will try the pinch of sugar and maybe use just 1 cup of the tomatoes. I don't do hot, but my guys will still love it! I love rotel,but I only buy the mild.

  3. I am trying the recipe in "So Easy to Preserve" on page 68 (Chile Salsa). I believe Dave has said that was the recipe he uses for 'Ro*tel style tomatoes. My first batch is delicous, but too hot for me. I used 2 lbs. of roasted Aneheims. Could I make another batch without any peppers and mix with the hot batch to cool it down a bit? I think I have read that you can use less peppers just not more?

     

     

    I decided to make another batch using all bell pepper. I mixed it with the hot batch and canned it. Still a little too hot, but not too bad. So can anyone tell me if I can just use less total peppers, or do I have to add milder peppers to make up the total amount called for?

  5. I didn't feel too hot yesterday, so I hand diced 2 gallons of onions for salsa while I watched tv. I usually end up throwing my veggies for salsa in the food processot, but I prefer hand cut when time allows. I'm well prepared with onions and peppers now if I can just get some more tomatoes. I sliced the last of my belle pepper into strips and froze them on a cookie sheet.. I can't wait to try an old family recipe for Pepper Steak that dd gave me when we went to Indiana!

  6. I wish I could remember who first posted this, so, I can thank them personally. I always use dishwashing detergent and a wash cloth to clean my dishes well to prepare them for the dishwasher. Lately, I have started using a dime sized dollop of that same dishwashing liquid (Dawn, Joy, Palmolive, etc). in the soap cup of the dishwasher instead of dishwasher detergent. I save $7-$8 per bottle on dishwasher detergent and no spotty dishes. I happen to use Palmolive. I am told you must not use a bleach formula detergent or use too much. A dime sized spot will do you. I did not believe it, either until I tried it.

     

     

    Now that sounds interesting! I was going to make the home-made dishwasher soap before my store bought bottle ran out, but this would be so much easier. My dishwasher soap cup has 2 sides, one that you close, and one side is open. would you put a dollop in each side?

  7. Oh yes it is! I have run across this so many times while working on my older family members. I remember when I first started using Ancestry, I was hung up for several days because I mistakenly thought that a census could not be wrong! One of my grandma's sisters was listed as Kara, and I had never heard of a Kara! I even looked on some other trees made by my kinfolk and they had copied Kara from the same census and didn't even know enough about the family to realize it was incorrect. I kept digging, thinking that maybe it was a child that had died young that we didn't know about. I finally figured out that Kara was in fact my Aunt Nora! The dates were correct, just spelled the name wrong. So be careful about getting info from other trees!

  8. The Family Dollar Store in our area had a cupon for $5 off of a $25 purchase this week. They had Chicken of the Sea tuna on sale for 2/$1 and VanCamps Baked Beans (28 oz. can) for $1.25. With the cupon, I got 20 cans of tuna and 10 cans of beans, plus a couple of small canned hams for $24! Then we stoped by Freds and got dry limas for $1 a bag and cream of...soup 2/$1. Also found another brand of baked beans for $1 a 28 0z can. Before things got so high I only used Bush Baked Beans, but for half the price, I decided to start trying other brands.

    Thanks for the recipe, Annarchy! Those sound great! I think I might experiment with mixing the dough in my bread machine and replacing one cup of white with wheat flour. I know they wouldn't be as authentic but then we could feel less guilty about slathering butter on them! ;)

     

    Had the first battle in a long war over "crunchy" towels with the family! The clothesline and lower electric bill are going to win this battle!

     

     

    I love "crunchy" towels. They absorb water so much better. You actually get dry using them!

  11. :thumbs: For the info on the fat free sour cream. I was wondering about that when I read over the recipe. Wasn't sure if it would work or not. I always try to watch the fat and calories too! Beans are one of the best foods for high fiber and low calories. Very good for us diabetics.
  12. Okay, I know there's a bean thread around here somewhere but I can't seem to locate it!

    I found a great website with thousands of bean recipes: www.justbeanrecipes.com I tried the following recipe last night and it's definitely filling and healthy. And oh, did I mention it's CHEAP?!? I made a crockpot full that will feed my family for 3 nights with a bit leftover for lunch for right around $2.00. Or, 20 cents a serving. And, if I made it in the early spring when my garden was producing potatoes and celery, it would cost under 10 cents a serving. Paired with corn and melon straight from the garden and dinner is done for pennies a plate!

     

    Beans and Potatoes

     

    2 cup dried pinto beans

    3 large potatoes, chopped (original recipe called for them to be peeled. I left the peels on!)

    2 stalks of celery, chopped

    salt to taste (I used some chicken broth)

    1 large sweet onion, chopped

     

    Cook beans until tender - crockpot, pressure cooker, or canned if you're in a hurry.

     

    Add potatoes and celery and cook until potatoes are tender. Salt to taste (I used chicken boullion). Saute onion until browned and stir into potatoes and beans. I also added some tobasco at this point.

     

    DH and I are watching fat and calories so we ate the dish as is. I put grated cheese on top of my daughters dish and she scarfed it down. It would also be great with some ground meat or chopped ham mixed in. I kept ours vegetarian because I'm trying to make 2-3 meatless meals a week for both health and financial reasons. Probably not an ideal meal for diabetics although you could easily use jerusalem artichokes instead of potatoes and if served with a healthy side of fresh brocolli, it probably wouldn't cause a sugar spike.

     

    Andrea, A lady from my church gave me the Beans and Potatoes recipe about 10 years ago. The only difference was she also added carrots. I add 5-6 because I love carrots! This is one of my favorite bean recipes. I'm also trying the Crusty Mexican Bean Bake tomorrow. Thanks for the recipe.

  13. My recipe is called 'Blueberry Polenta", but it is the same recipe as the cornmeal mush on the Quaker Yellow Cornmeal round box. I just make half as much and add the blueberries. I brown mine on a griddle with butter flavored Pam and eat with Smuckers sugar free syrup. So good!! My grandma sure would get a laugh out of fancy people calling cornmeal mush--Polenta! :sHa_sarcasticlol:

     

     

  14. I made a loaf pan of corn meal mush for DH's breakfasts for the next few days. He loves it and it's a cheap, cheap dish to make. Fry it, add a little butter and syrup and he's good to go. Well, I'd probably give him a little ham or sausage patties to go with it.

     

     

    Dee, I love corn meal mush!! Have you ever mixed in a few blueberries or huckleberries? I like to stir in about 1/2 cup of berries before you pour it in the pan. So good!! Now i'm ready to make some.

  15. DH and I rode over to Schillinger Flea Market so I could trade some books. I admit that I do get testy when I don't have something good to read! I wanted some strawberries but had already priced them at Wal-Mart...$1.98 for a 1 pound box, but I heard the fruit stand vendor anounce that he had strawberries for $9.99 a flat. So I picked up a flat of strawberries, 10 lb. of potatoes for 1.99, and a huge head of fresh cabbage. We stopped at CVS and found Ocean Spray Cranberry Sauce for .42 a can. I make squash dressing quiet often, so we use a lot of cranberry sauce. Umm...I think tomorrow will be squash dressing, peas with okra, and cabbage day! :feedme:
