Freetobeme Posted October 7, 2005 Share Posted October 7, 2005 Thunder and Lightning Pickles 6 1/2 lbs ripe yellow cucumbers (4 to 5 large) (you can use green) 3 pts ice water 2/3 c salt (not iodized) 2 to 4 sprigs green dill blossoms, seeds well developed 1 tsp white mustard seed 2 tsp fresh grated horseradish 2 pods hot red pepper, med size 2 1/2 c 5% vinegar 2/3 c water 3/4 c sugar Wash and pare cucumbers thinly. Cut in half lengthwise and scrape out seedy portion. Cut halves in thirds lengthwise, then crosswise. Put into glass bowl and cover with brine made with the ice water and salt. COver and let stand overnight. Drain well. Divide next 4 ingredients between 2 sterilized quart jars. Heat rest of ingredients to boiling, add cucumbers and simmer only 5 minutes. Pack pickles into jars up to 3/4 inch from top. Add boiling solution to 1/4 inch from top of jar. Seal and waterbath. Makes 2 qts. If this doesn't seem right, I have another one. Link to comment
