Fruit "Kabobs"

You all are such good cooks, I'm reluctant to post a recipe

but this is one of our favorite desserts:

Pineapple Fruit Dressing

1 Tablespoon cornstarch

1/2 cup sugar

2 egg yolks, slightly beaten

1/3 cup water

1/8 teaspoon salt

2 Tablespoons lemon juice

3 Tablespoons pineapple juice (I buy a small can of pineapple chunks to get the juice)

 

Mix cornstarch & sugar in saucepan. Add egg yolks & water

Cook over direct heat until mixture boils. Boil 1 minute,

stirring constantly. Remove from heat. Add juices and salt. Cool.

 

Can use fresh fruit on skewers but I usually put Kiwi slices, the pineapple chunks from the can, sliced bananas,

and fresh strawberries on a dish and serve the sauce in a

bowl. Also, a small dish for each person to put their sauce in. When I don't have fresh fruit, I defrost frozen fruit

slightly, and serve that.
