moonstar Posted November 21, 2005 Share Posted November 21, 2005 This is very good. 1 package of dry yeast 3/4 cup lukewarm water 1/2 cup sugar 1/2 teaspoon salt 3 eggs 1 egg, seperated 1/2 cup soft margarine or butter 3 1/2 cups flour, sifted 1 Tablespoon sugar *Sprinkle yeast on water. Stir to dissolve *Combine 1/2 cup sugar, salt, 3 eggs, 1 egg yolk, margarine or butter and 2 cups flour in a bowl *Add yeast mixture *Beat with electric mixer at medium speed until smooth, about 2 min. scrapping bowl occassionally, or beat with a spoon *Gradually add remaining flour to make a soft dough that leaves the sides of the bowl. *Cover and let rise in a warm place until doubled, about 1 hour *Stir down dough. Cover with plastic wrap. Refrigerate 8 hours or overnight. *Stir down dough. Divide dough into 32 equal pieces *Shape 24 pieces into balls & place in greased muffin pan cups *Flatten & make a small indention in each with fingers *Cut remaining 8 pieces into 3 equal parts *Shape each into a small ball & place in indention *Let rise until doubled, about 1 hour *Beat together remaining egg white & 1 Tablespoon sugar, slightly *Brush over rolls *Bake at 375 degrees for 18 min. or until golden *Remove from pans; cool on racks Link to comment
