Storing Fresh Ginger

Does anyone know what the best way to store fresh ginger is? I have tried a brown bag in the vegetable crisper, but it seems to dry out that way. Can I freeze fresh ginger?

Yes, you can peel, grate and freeze in ice cube trays. You can plant it in a pot and clip the greens, you can grate it and dry it on a dehydrator tray. I do all three. I prefer to freeze it. I peel, grate and freeze on a tray, and store in a small freezer jar. I like it all ways though.

Thanks Safetylady - I'll give it a try. Has to be better than finding a shriveled dry lump in the crisper!
