I am planning on doing water bath canning for my tomatoes and other appropriate foods, but I can't do this with eggplant. I think eggplant is too delicate to freeze. Maybe I can attempt drying it? Darlene Posted July 23, 2006 Share Posted July 23, 2006 From experience, eggplant does not can well at all...it gets mushy and tastes terrible. Dehydrating it though is a great idea to preserve it. Link to comment
