anyone know of a good homemade tomatoe soup recipe?

some friends of mine made what they called homemade campbell's tomato soup from a recipe a few years ago, and now they cant find the recipe for it anywhere... it was sooo goooood, and it did taste like the canned only way better....does anyone know of such a thing? she said it did have red peppers in it but that is all she can remember... also she thought that the gal that gave it to her got it out of an OLD red and white checkered betty crocker cook book... its not much to go on, but let me tell you if we can find it its worth the trouble! thanks, AM

My Old Betty Crocker cookbook has a recipe in it.. But it doesnt have red peppers..

 

1 Med Onion chopped fine

2Tbs butter (saute onion in the butter)

1 pkg cream cheese sofened

2c condensed tomato soup

1 soup can of milk

1/2 tsp paprika

1/2 tsp sweet basil leaves

1/8tsp garlic powder

 

My book has this penciled in (pre owned)

1/4 tsp red pepper (optional)

Ok. I decided to look in my betty crocker book first wasnt sure what you were looking for. Here is my own recipe. I hope you like it:)

 

TOMATO SOUP

 

* 6 medium sized tomatoes or about 2 pound Italian plum tomatoes

* 1 green bellpepper (or red) chopped

* 1 onion, chopped

* 1 stalk celery, chopped

* 2 cups broth or water

* 3-4 tablespoons flour

* 1 tablespoon tomato paste (optional)

* 1/2 teaspoon dried basil

* 1/4 teaspoon freshly ground pepper

* 1/2 teaspoon salt

 

Cut tomatoes into thin wedges and place in 1 1/2 quart saucepan Simmer 15 minutes

Strain to remove tomato skins and seeds.

Add all ingredients.

Simmer uncovered for 30 minutes.

 

Adjust seasonings. Serves 4-6

ok. For canning I havent tried it yet.. but this is the recipe I have that Im looking at trying this year because its similar to my own.

 

8 quarts tomatoes, quartered, no stems (skins on - to be strained later)

3 c chopped celery (finely chopped)

3 c onion, chopped fine

1c chopped green pepper

4-5 cloves chopped garlic (or more)

4 full sprigs of parsley, stems removed

about 1 cup water

1 1/2 tsp salt

3 tablespoons sugar

1/2 tsp pepper

 

cook on medium heat until celery and peppers are tender and can be cut on side of pan with a wooden spoon.
