After endless searching on the internet, I found this one. He's gotta make it today. Sicilian Sesame Brittle 1/3 cup sugar 1 cup honey 1 1/2 cups sesame seeds 1/4 teaspoon ground cinnamon 1 lemon, zest of, finely grated (use at your discretion) 1. Butter or oil a jellyroll pan or other large, oblong pans;you might put a towel or trivets under it to protect your countertop or table from heat. 2. Put sugar and honey in a wide, deep pan and bring to a boil over medium heat; mix evenly with a metal spoon. (honey will foam a lot.) 3. Using a candy thermometer, note when mixture reaches 225F and add remaining ingredients, stirring until they are mixed evenly. 4. Cook, stirring occasionally, to 300-310F, a light caramel. 5. Remove from heat and pour into prepared pan or pans spreading evenly with the spoon. 6. After it cools slightly, loosen fron the pan with a spatula. 7. While still warm and flexible, cut into rows about 1 inch wide; then cut diagonally into bite size diamonds(keeping your knife buttered or oiled.) 8. Store in airtight container.
