JCK88
I promised someone on this board someplace that I would come up with a substitute bisquick mix recipe for gluten-free, corn free cooking. I don't remember who wanted it or where I said it...but I do remember saying it so....today I had to be home all day and came up with this really tasty recipe. I tried it in a couple of dishes and the non-allergic folks and daughter's boyfriend pronounced everything really good, said they couldn't tell it was GF, and proceeded to clean it up in record time. So here it is folks, my version of Bisquick! ANd if this is the wrong place to post it, move it, please....or whatever, LOL SUBSTITUTE BISQUICK 5 cups favorite bread style GFCF flour mixture (I use Bette Hagman's) 4 1/2 tb baking powder 2 Tbsp. sugar 2 1/2 tsp. salt 2 tsp. xanthan gum 1 packet of unflavored gelatin 1 cup solid shortening, i. e Crisco (butter flavored is good in this) Sift dry ingredients together. Cut in shortening with pastry blender until it resembles crumbs. Use in Bisquick 'Impossible' style recipes but watch for too much leavening when adding to recipes. This also works great in Bisquick cookie recipies. Link to comment
