And they're also one of the chief causes of cuts in the kitchen because of the extra effort required with inefficient knives (let's watch out for those fingers, ladies). Depending on the knife, it can take as little as 3 pulls or up to 15 or 20 for a really dull knife. It does take off a little bit of the metal but is cheap enough to have a couple of them lying around. And it's relatively safe as far as knife sharpeners go. Screaming Eagle Posted January 26, 2008 Author Share Posted January 26, 2008 You can sharpen knives with high carbon content on concrete but don't expect the edge to last very long. Other knives (the best ones really) have added components that are too hard for that. The Old Hickory kitchen knives are a good example. Great inexpensive knives but the blades don't stay sharp very long (and they'll rust easily) because it's not really what most people recognize as hard metal. The Quick edge will sharpen any knife but the ones with high carbon content will sharpen with just a few pulls. Link to comment
