Canning lemons

Can you can lemons? I know about salting them for savory dishes, but what about for when you want to do cakes, or cookies?

does anyone know?

You can do the sections, like you would oranges or grapefruit, if that is what you want.

Here is the link and I am sure lemons are just fine, as well. I have no idea how they turn out. We don't grow them here, so I just buy what I need fresh or bottled lemon juice. They are very high in acidity. Why not can just a couple jars and see how you like them ?

Thank you, Violet. Lemon juice are becoming scarce in our area and I'm thinking that actual lemons may be next.

So, am I to understand that processing time is the same for both pints and quarts? For some reason that chart makes me dizzy.
