It is (usually) inexpensive, it is easy to make, convenient, healthy, warming, comforting, can be made as simple or varied as you like, can be served for days in a row, uses up leftovers or things that lurk at the back of the fridge, andonandonandon... susie Posted September 20, 2008 Author Share Posted September 20, 2008 Today's soup has been made from pork spareribs which had previously been salted and canned in their own fat. I fried the ribs with an onion and a garlic clove, then added a sliced leek and several small whole potatoes and enough water to cover. After simmering for a while, I tossed in a head of broccoli which was beginning to flower, a small jar of carrots, a pinch of thyme, a bayleaf, a splash of green Tabasco, and a fistful of dehydrated celery stalks.
