Shandy
Very strange. I did the pears the same as I have every year, and the batch I did last night has air bubbles trapped thru out the jars. What could I have done? Weird. Packed the pears in tightly after simmering them for a few minutes in a pot, poured the water from the pot over them up to 1/2 inch headspace, sealed, then canned. I've never seen so many air bubbles in any of my canned goods. Anybody have any idea of what I might have done that caused this? And how long do you think they will be good for? I'll set them on the front of the shelf to use first, I guess. Link to comment
Crazy4Canning
Did you free the bubbles after you added the liquid and before wiping the rims & adding the lid? Sometimes if you pack them too tight air gets trapped. I've found that with pears & peaches they can really slip together. When I did my pears a couple of weeks ago, the girl I had helping me really packed them in and they were so tight I couldn't get my bubble freer around the fruit. I had to take some out because I didn't want lots of bubbles. . . . I still did get a few, but not many. Link to comment
Shandy
I did pack them in really tight. Thanks. I'll bet that was the problem. It was my last batch and I didn't want any left over. What will this mean for the keeping quality of these jars? Link to comment
Crazy4Canning
Easy - eat those first (oh darn! you hafta eat tasty pears!) and watch those closely for off-smell, taste, etc. Link to comment
