Peanut Butter Fudge

I don't remember where I got this from, but it is the best and easiest fudge recipe I have tried that tastes like old fashioned fudge. Takes about a half an hour to make from start to finish.

Peanut Butter Fudge

1/2 Cup butter

2 Cups brown sugar

1/2 Cup milk

1 Cup peanut butter

1 tsp. vanilla

3 Cups powdered sugar

Line an 8x8 pan with aluminum foil and spray with non-stick cooking spray.

In a medium saucepan, melt the butter. Then stir in the brown sugar and the milk. Heat to boil and then boil for 2 minutes, stirring frequently. After the 2 minute boil, remove from heat and stir in the vanilla and peanut butter until smooth. In a large bowl, sift the powdered sugar. Pour peanut butter mixture over the top of the sugarr and stir until candy is well combined with no lumps. Pour into the 8x8 pan. Cover with cling wrap and refridgerate until firm. Cut into small squares and serve.

This might be good with some nuts mixed into it also...maybe half a cup? I am going to try it with some pecans next time per DH request lol!
