First I found an answer to a similar post a while back where Violet told the person she did not know of any approved (tested for safety) recipe for Black Bean and Corn Salsa. Second I found this page that I thought might help you - I refer to this site a LOT when trying to determine what is safe. http://www.uga.edu/nchfp/how/can_salsa.html As best as I can tell you have a few options. What I do, right now, is make a salsa that I like, I make it up by the gallon, keep it in the fridge until it is used up. For my family, that has never allowed any salsa to go to waste. I use it constantly in soups, stews and recipes. Besides eating it with chips. I think if you are wanting long term storage, the freezer may be your best bet. I haven't tried it since I am working towards shelf stable preps. KEEP THIS IN MIND You can stock the INGREDIENTS to the recipe you like and make it up as you go if you can't find a recipe for canning it. Hope that helps a bit! Link to comment
