Corn and black bean salsa

Hi Heather,

 

Nothing like a tasty salsa! :)

 

I did some searching and here's what I found.

 

First I found an answer to a similar post a while back where Violet told the person she did not know of any approved (tested for safety) recipe for Black Bean and Corn Salsa.

 

Second I found this page that I thought might help you - I refer to this site a LOT when trying to determine what is safe.

As best as I can tell you have a few options. What I do, right now, is make a salsa that I like, I make it up by the gallon, keep it in the fridge until it is used up. For my family, that has never allowed any salsa to go to waste. ;) I use it constantly in soups, stews and recipes. Besides eating it with chips.

 

I think if you are wanting long term storage, the freezer may be your best bet. I haven't tried it since I am working towards shelf stable preps.

 

KEEP THIS IN MIND

 

You can stock the INGREDIENTS to the recipe you like and make it up as you go if you can't find a recipe for canning it. Hope that helps a bit! :wave:
