anyone ever make their own sardines?

I noticed my local meijers store sells sprat or smelt (little fish). I understand people fry them and eat them whole.

 

These little fish got me thinking about sardines. Has anyone here ever canned them?

 

I know that some people say we cannot can anything in oil, but I watched a show on the food network (an episode of no reservations I believe) where a bar was canning sardines in oil and serving them to their customers along with the oil and bread for dipping.
