Jayceef
Just wondering if one could make rhubarb pie filling that is safe to can. I have a good source for rhubarb and usually do freezer pies out of it. I just think I will be using more and more of my freezer space this year for other things. Link to comment
Jori
The Ball Book has Rhubarb Strawberry Pie Filling & the National Center for Home Food Preservation has Stewed Rhubarb. http://www.uga.edu/nchfp/how/can_02/canpie.html I also just did a search of Mrs. S. There are several threads on rhubarb but I bumped one that had several different recipes, including rhubarb sauce. Good Luck! Link to comment
Dave Digs Dirt
We use the Stewed Rhubarb instructions that Jori posted and then add the thickener at pie making time. You can't can pie fillings with any thickener added unless you use Clear Jel and it makes it too thick for my taste so we just add our corn starch to it when we open the jars. Link to comment
