Depression Desserts (cakes & cookies & such)

Since the car has been broken we haven't been able to

get to the store, since the car has been broken we

don't have much money till payday, we were wanting some

cake to eat and there was only one egg left....

 

A regular cake mix takes 3 eggs. I found a cake mix

that takes 1 egg. I didn't want to waste my one egg

one a cake. I did some research a found some

substitutes. For my cake I used mayo. It made the

cake very moist! Almost to moist to come out of the

pan. Lukily, I was using a silicone pan. I think next

time I will use less mayo. Oh, I only put in 6 Tbs.

not 9, that would be WAY too much.

 

3 Tbs. mayo = egg

or

2 Tbs. liquid + 2 Tbs. flour +1/2 Tbs. shortening +

1/2 tsp. baking powder. Mix then add to recipe.

 

What are some other desserts that won't require lots

of ingredients and lots of butter, eggs, milk. Some

milk is ok.
