I was looking for a way to add some soy to my diet. I can't eat TVP, but I can eat other forms of soy like tofu. So I found this recipe for Scrambled Tofu in the South Beach Diet Cookbook. I've changed it here to where I like it. You can tweak it til it pleases you. Add different kinds of cheese, or no cheese... different veggies like diced sweet peppers or even mushrooms. If you don't like tofu, you probably won't like it but if you do.... this might be something you will enjoy. It resembles scrambled eggs because of the color of the tumeric and the texture of the tofu. This will serve two adults. (or one very hungry person Link to comment
