Kudzu is edible? Amazing. I'm gonna have to try this next time I head to my uncle's in Tenn for a Kudzu hit squad party. (A couple dozen of us all whacking away at the kudzu can get silly, but the dratted stuff will eat your car if you leave it parked close to a vine- in about a month!) I've hacked and burned this stuff out since I was a baby magpie, now its nice to know how useful the stuff could be in moments of need.
