I don't have any...Anyone have a recipe I can try? I have 3, 11 pound buckets of pitted sour cherries here waiting!!! Link to comment
Darlene Posted July 21, 2006 Share Posted July 21, 2006 Here's the recipe I use: Cherry Pie Filling 6 quarts fresh pitted cherries 7 cups sugar 1 3/4 cups Clear Jel 9 1/3 cups cold water 1 teaspoon cinnamon (optional) 1/2 cup lemon juice 1/4 teaspoon red food coloring (optional) Rinse and pit cherries...place 6 cups at a time in 1 gallon of boiling water. Boil each batch 1 minute after water returns to a boil. Drain, but keep heated fruit in a covered bowl or pot. Combine water, sugar, Clear Jel, and if desired cinnamon and food coloring in a large saucepan. Stir mixture and cook over medium high heat until mixture thickens and begins to bubble. Add lemon juice and boil 1 minute, stirring constantly. Fold in drained cherries immediately and fill jars with mixture without delay, leaving 1" headspace. Adjust the lids and process in water bath canner for 30 minutes, both for quarts and pints. Link to comment
