westbrook Posted April 19, 2007 Share Posted April 19, 2007 Baked Beans Recipe By : Southern Living Canning & Preserving Cookbook 1 quart dried beans 1/2 pound salt pork 1 quart Tomato juice 3 tablespoons sugar 2 teaspoons salt 1/4 teaspoon mixed spices Sort and wash the dried beans, then cover with boiling water. Boil for 2 minutes. Remove from heat and let soak for 1 hour. Return to heat and bring to a boil. Drain and reserve the liquid. Cut the pork in 2-inch pieces. Fill the jars 3/4 full with the hot beans and add a piece of salt pork to each jar. Mix the remaining ingredients in a saucepan and bring to a boil. Pour sauce into each jar with beans to 1/2 inch from the top. Finish filling with reserved liquid, if needed. Place lids on jars and tighten bands. Process pint jars for 1 hour and 5 minutes at 10 pounds pressurs. Link to comment
