Vegan Wheat Gluten Steaks and Chorizo

These Wheat Gluten Steaks are AWESOME!

 

Broth:

 

3/4 Cup Tamari, Braggs, or Soy Sauce

 

1/4 Cup Brown Sugar, Mollasses, or Maple Syrup, ect.

 

3 Cloves of Garlic (I put tons more than this...I love garlic)

 

3 Onions Sliced Thickly

 

2 quarts water

 

 

Gluten:

 

2 Cups Water

 

2 Cups Vital Wheat Gluten

 

1. Bring broth to a boil.

 

2. Add Water to a bowl, then whisk in Gluten.

 

3. Take handfuls of dough and squeeze and massage to remove excess water, and form a "rubber ball".

 

4. Slice and flatten "steaks" and drop into broth.

 

5. Reduce heat and simmer 30-45 mins.

 

6. Remove "steaks" and use as any meat substitute. These ground well as "hamburger".

 

 

Easy Chorizo:

 

2 Clove of Garlic (minimum)

 

1 tsp Salt

 

4 Tablespoons Vinegar (any kind...I like Apple Cider)

 

2 heaping Tablespoons Chili Powder

 

2 Tablespoons Dry Oregano

 

2 Tablespoons Dried crushed or powdered Ancho Chilies (in a pinch I have used Tai peppers)

 

2 teaspoons Cumino powder

 

1 teaspoon Black Pepper

 

1/2 teaspoon of Sugar

 

3/4 of the Gluten Steaks prepared from above, chopped tiny or ground

 

(If using real ground sausage then add 2 1/2 Tablespoons of Water)

 

1. Mix it all together and let it marinade in the refrigerator for 2 days minimum. This freezes very well too.

 

 

This is so incredibly good...and it's not greasy like real chorizo sausage. I just stir fry it in a little olive oil, throw in a couple of eggs, potatoes, whatever and stuff it in a home-made flour tortilla with some cheese...yum yum!!! bighug

 

I'm not totally vegetarian or vegan anymore, so I have no problem eating eggs or cheese, but this eaten alone with fried potatoes on a tortilla is one of my favorite dishes.

 

Goatherder, I have a really good vegan "cheese sauce" that you might like too:

 

2/3 Stick Margerine

 

1/2 cup flour

 

3 1/2 cups hot water

 

1 1/2 tsp. salt

 

1 Tablespoon Tamari/Soy/Braggs

 

1 tsp. Worcestershire

 

1 1/2 tsp. garlic powder

 

1 good pinch of Tumeric powder

 

1/4 cup vegetable oil (or less, or substitute broth)

 

1 heaping Cup of Nutritional Yeast Flakes

 

 

1. Melt margerine over Med. heat

 

2. Whisk in flour until smooth

 

3. Whip in Water, salt, tamari, garlic, tumeric

 

4. When sauce is thick and bubbly whip in oil and Ntritional Yeast Flakes.

 

5. Remove from heat.

 

Use as any cheese sauce...this is really good too!!!

 

I would take all dishes from above and layer with black beans and guacamole for a really nutritious and filling dip with blue corn chips or tortillas.

 

Gotta go now...I'm getting hungry!!!

I forgot to mention that I take the reserved 1/4 of the steaks from above, cracker bread them and fry them up like chicken fried steaks with mushroom gravy, potato smashers, and some greens...my DH loves this and gobbles it up...

I wasn't sure if people would really know what Seitan was...so I just call it Wheat Roast/Steaks...lol!!!

 

It's so much better than TVP, tempeh, or Tofu and super easy to make!!!

it reminds me of Swanson TV Dinners; Salsbury Steaks from the 60's

 

Like I said.. Seitan is part of my meat plan!
