Sawdust Pie

 

 

l 9-inch pastry shell

l- l/2 cups pecans, chopped

l-l/2 cups coconut

l-l/2 cups sugar

l-l/2 cups graham cracker crumbs

l cup egg whites (6-7)

 

Preheat oven to 450F. Line pastry-lined 9-inch pie plate with double thickness of foil. Bake 8 minutes. Remove foil. Bake 4-5 minutes more or until golden. Cool. Reduce oven temperature to 350F. In large bowl, combine coconut, graham cracker crumbs, pecans and sugar. In another bowl, beat egg whites just until foamy, add to coconut mixture, and mix well. Pour into prepared pie shell. Bake, uncovered, 35 minutes or until set. Makes 8 servings.
