Cornish Hens for Valentine's Day

Ladies make your Dear Hubbies a Valentine Dinner that he won't forget. Light those candles, put on soft backround music, get your best tablecloth and put it on your table, put fresh flowers in a vase at the center of your table along with the good china,and silver or paper plates and plasticware.

Greet your hunny with a big kiss when he walks in the door after work on Valentines Day and make him feel comfortable while you get the kids off to a babysitter or granny and granpies house. Make this time so you and your sweetheart can have it free for each other without interruption.

Serve your sweetie a romantic fare and then ladies take it from there......

 

Valentines Day Food Recipes Your Hunny will Love,

 

Cornish Hens for Valentine's Day

 

3 ea Cornish hens [1 3/4 lb ea]

6 Fresh rosemary sprigs

2 tb Butter, melted

2 tb Lemon juice

1 pn Salt

1 pn Pepper

Stuffing:

1 c Wild rice

3 c water

1 tb Butter

2 c Mushrooms, halved

1 Onion, chopped

1 1/2 ts Dried savory

1/2 ts Salt

1/2 ts Pepper

 

For Stuffing:

Rinse rice. In saucepan, bring water to a boil; stir in rice. Return to boil; cover, reduce heat and simmer for 45 minutes or until tender. Drain; place in bowl.

 

In skillet, melt butter over medium-high heat; cook mushrooms, onion, and savory for 3 minutes. Stir into rice along with salt and pepper; let cool.

 

Rinse hens; pat dry. Stuff cavities; tie wings and legs with string. Place on rack in roasting pan, leaving 2 inches between each. Tuck half of a rosemary sprig under each leg and wing. Stir butter with lemon juice; brush half over hens.

 

Sprinkle with salt and pepper and roast in 375 degrees F. oven, basting with remaining butter mixture, for 1-1/2 hours or until juices run clear when hens are pierced.

 

Remove trussing; cut in half along backbone. Serve, stuffing side down.

 

 

 

Valentine's Day Spanish Rice with Beef

Categories: Main dish, Meats, Rice

 

1 lb Lean Ground Beef

1/2 c Onion; Chopped, 1 Md

1 c Rice; Regular, Uncooked

2/3 c Green Bell Pepper; Chopped

16 oz Stewed Tomatoes; 1 Cn

5 ea Bacon Slices; Crisp,Crumbled

2 c Water

1 ts Chili Powder

1/2 ts Oregano

1 1/4 ts Salt

1/8 ts Pepper

 

Cook and stir the meat and onion in a large skillet until the meat is brown. Drain off the excess fat.

 

Stir in the rice, green pepper, tomatoes, bacon, water, chili powder, oregano, salt and pepper.

 

To Cook in a Skillet:

Heat the mixture to boiling then reduce the heat and simmer, covered, stirring occasionally, until the rice is tender, about 30 minutes. (A small amount of water can be added if necessary.)

 

To Cook in the Oven:

Pour the mixture into an ungreased 2-quart casserole.

 

Cover and bake at 375 degrees F, stirring occasionally, until the rice is tender, about 45 minutes.

 

Serve hot.

 

 

Crispy Chicken Drumsticks for Valentine's Day

Categories: Main dish, Poultry

 

8 x Chicken Drumsticks, skinned *

1 1/2 c Breadcrumbs

1/4 c Grated Parmesan Cheese

2 tb Minced fresh Parsley

1/4 ts Garlic powder

Salt and Pepper to taste

1/3 c Skim Milk

 

*about 2 1/2 pounds.

Rinse chicken with cold water, and pat dry.

 

Combine bread crumbs, parmesan cheese, parsley, garlic powder, salt and pepper; stir well.

 

Dip drumsticks in skim milk then dredge in breadcrumb mixture, coating well.

 

Place drumsticks in a 10x6x2 inch baking dish sprayed with Pam.

 

Bake at 350 degrees F. for 1 hour.

Serve over rice or with noodles.
