Mexican Beef Stew (crockpot)

Warm yourself up with this stew. Adjust the chili powder and taco seasoning to suit your taste.

 

6 servings

change recipe to:

 

10 hours 5 minutes

(5 min prep, 10 hrs cooking)

 

2 lbs beef stew meat

1 (28 ounce) can tomatoes with juice

1 cup frozen small whole onions

1 teaspoon chili powder (optional)

1 (1 1/4 ounce) packet taco seasoning mix

1 (15 ounce) can black beans, rinsed and drained

1 (11 ounce) can whole mexicorn whole kernel corn, drained

1. Mix first 4 ingredients in a 4 quart crockpot.

2. Cover and cook on low for 9-11 hours until beef is tender.

3. Add remaining ingredients and stir well.

4. Cover and cook on high for 15-30 minutes or until it reaches the desired consistency.
