Dee
Ingredients 3 cups sliced fresh peaches 6 tbsp. sugar 2 cups all purpose flour 1 tsp. baking powder 1 tsp. soda 1/2 tsp. salt 1 tsp. ground cinnamon 1/4 tsp. freshly grated nutmeg 1 1/2 C sugar 1/4 C shortening 1/4 C unsalted butter, softened 2 eggs 1 cup chopped walnuts 1 1/2 tsp. vanilla extract Cooking Place peaches and 6 tbsp. sugar in the container of the food processor with knife blade in place. Puree. Mixture should yield 2 1/4 cups. Combine flour, baking powder, soda, salt, nutmeg, and cinnamon. Set aside. Cream sugar with shortening and butter. Add eggs and mix well. Add puree and dry ingredients, mixing until all ingredients are moistened. Stir in nuts and vanilla. Spoon batter into two well-greased and lightly floured 9x5x3 inch loaf pans. Bake at 325 for 55 to 60 minutes or until done, Cool ten minutes in pan and then turn out on a rack to let cool completely. Notes Makes two loaves but they go fast so you might want to just turn around and fix up another batch. Quote Link to comment
