Low Fat Banana Nut Bread

Serving Size: 8 thick slices

 

Preparation Time: 1:30

 

Amount/Measure/Ingredient

 

2 eggs

 

1/3 cup applesauce

 

2/3 cup sugar

 

1 cup whole wheat flour

 

3/4 cup all purpose flour

 

2 3/4 tsp. baking powder

 

1/2 tsp. salt

 

1 cup mashed bananas (about 3 medium)

 

1/4 cup chopped walnuts

 

Preparation:

 

Preheat oven to 350 degrees. Mix first 3 ingredients with mixer at medium speed until pale yellow Add dry ingredients alternately with bananas to mixture. Mix at medium speed until well blended. Pour into greased or sprayed loaf pan (9 x 5 or 8 1/2 x 4 1/2). Bake 45-60 minutes, until cake tester comes out clean and dry. Let cool in pan 20-30 minutes before turning out onto rack.
